AMAZING Passover Mandelbot
My family makes this recipe (courtesy of Beit HaChatulim, an old-school website dedicated in part to vegetarian Pesach recipes) every year. The mandlebrot are delicious in their own right and not just by Pesach-dessert standards. In fact, they're pretty indistinguishable from non-Pesach mandlebrot. They're also easy to make and highly recommended for a Passover potluck.

just baked a batch of those last night - it's been a favorite recipe in my family for several years too. :c)
Since I didn't have potato starch, I just left it out - all 3/4 cup of it - and replaced it with more matzah flour, and they came out fine.
