Beans and Rice

1 onion
1 can of diced tomatoes
1 can of black beans
2 cups of brown rice

Chop up the onion. Heat oil in a pan and when it's hot add the onion. Open the tomatoes and the beans, drain the beans. When the onion is soft add them both with the rice and add water to cover the rice (2 or 3 cups). Cover the pan and cook until the rice is tender. Add salt and pepper to taste. Cumin is also very good.

I recommend throwing in a couple of cloves of crushed or minced garlic along with the onions (and a minced jalapeno if you want), and a couple of teaspoons of cumin and a teaspoon or so of coriander with the tomatoes and beans. Jazzes things up a bit.

Those are great additions. I left them out of the origional to make it as simple as possible, but a bit of jazz is certainly in keeping with ER's rules of thumb.

I usually add diced green or red peppers and some canned corn, plus garlic, cumin, and coriander. Another plus of this recipe is that if you add some water to it, you get yummy black bean soup!
